Ingredients

  • 1 lb carrots, peeled
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 clove garlic, minced
  • Salt & pepper, to taste
  • Fresh parsley, chopped (for garnish)

 

Instructions

  1. Heat oven to 400°F.
  2. Toss carrots with oil, honey, garlic, salt, and pepper.
  3. Roast on a sheet pan for 20–25 minutes.
  4. Finish with chopped parsley.

 

Chef Tip

Let the carrots caramelize slightly in the oven — that golden color is where the richest flavor develop.
